Home made Spring Rolls.
Ingredients:
1 cup of white flour
1/4 teaspoon of salt
3/4 cup of water
2 chicken legs, seasoned, boiled and chopped up
1 carrot, cleaned and grated
1 green onion, chopped
1/2 bulb of regular onion, chopped.
2 tablespoons of vegetable oil
Some salt, cayenne pepper, garlic and knorr/maggi cube
1 egg white.
Directions:
To make the wraps, first mix flour, 1/4 teaspoon of salt and water together till no lumps. The dough must be very thick. When done, cover bowl and leave for 1hr.
Fry in tablespoons of oil, the onions with a little salt, then the chicken, carrots and green pepper for 10mins. Then add other seasonings and allow to simmer for 10 extra minutes. Remove from the heat and place in a sift for 20 to drain the liquid. (Because stuffing is supposed to  be a bit dry.
Place a clean, dry frying pan on medium heat, and with a tablespoon, put some dough in the frying pan and spread around immediately forming large circles of thin dried dough. When the top of the dough is dry, remove gently from the pan and set aside. Then repeat this step till all the dough has been fried.
Put the stuffing on one side of the dough, and roll up covering the edges and sealing with egg white.
Fry in a deep fryer till the rolls are light brown and then remove.
Voila… spring rolls!

Chicken Cake…
Ingredients:

1 teaspoon of vanilla
3 green onions, finely chopped
1/2 bulb of regular onions, finely chopped.
2 chicken legs, seasoned, boiled and shredded. (no bones)
1 spoon of baking powder
1 teaspoon of salt
1 teaspoon of cayenne pepper/ black pepper
1 cube of knorr/maggi
1 egg
1/4 cup of vegetable oil
1/4 cup of milk
Directions:
Pre-heat the oven to 375 degrees before beginning.
Mix the oil, milk and egg in a bowl. Then add the baking powder and the vanilla and mix.
Add the flour gradually and mix till no lumps.
Add the chicken, regular and green onions and seasonings and mix.
Allow to sit for 1min. then place in the baking pan and then bake in the oven for 35-45mins.
When cooked, allow to sit till it has cooled.

Red Velvet Cake.
Ingredients:
1 tablespoon unsweetened cocoa powder
2ounces of red food colouring
1 cup of milk
1 teaspoon of salt
1 teaspoon of vanilla extract
1/2 cup of vegetable oil
2 cups of white sugar
2 eggs
2 1/2 cups of white flour
2 teaspoons of baking soda
Directions:
Preheat oven to 350degrees, grease two 9 inch round pans.
Mix the milk, salt and vanilla extract, then add the oil and the sugar and mix together.
Beat the eggs and add to the mixture with the cocoa powder and the food colouring. 
Gently add the flour and mix gently. Then add the baking powder and mix gently till smooth with no lumps.
Gently pour the batter equally into the two greased pans and put in the oven for 30mins.
Gently use a tooth pick to check the center of the cake in the oven to see if it is cooked.
When cooked, cool at room temperature and ice. with whipped icing.

Easy to make Easter dinner…
1: Jollof rice : 
Ingredients:
Parboiled rice
Tomoatoes
Pepper
onions
Spices: salt, knorr, curry, thyme.

Directions:

Blend the tomatoes with some onions and pepper together. Fry in a pot with 3 cooking spoons full of oil and sliced onions. Cook for about 15mins on high heat. Then add the parboiled rice and the seasonings and then cook till rice is soft and all the stew has dried up. When cooked, take off the heat and allow to cool.

2: Potato salad
Ingredients: 
7 Boiled cut-up potatoes
steamed peas, chopped carrots and sweet corn
3 tablespoons full of mayonnaise
3 steamed sausages
Spices: salt and black pepper
Directions: 
-mix all the cut up potatoes with the steamed vegetables and the sausages in a bowl and then add the mayonnaise and mix them all together. Add a pinch of salt and black pepper and stir.
3: Garnished chicken
Ingredients:
half a bulb of red pepper, sliced
one small red pepper, sliced
half a bulb of green pepper sliced
half a bulb of onions, sliced
spices: lemon-ginger, red pepper, salt, balsamic vinegar etc
Directions:
-Boil the chicken for 15mins with some pepper, salt and onions. Put in a metal tray and then grill in the oven for 20mins.
-In a frying pan, fry the sliced vegetables with onions in a teaspoon of oil for 10mins. Add the sliced small peppers as well. Then add a teaspoon of balsamic vinegar, salt, pepper and lemon-ginger seasoning, fry for 5mins.
When the chicken is done, add to the frying pan with vegetables and stir in to mix the vegetables and sauce with the chicken.

Easy to make Easter dinner…
